Walleye Recipe with Beer Batter

Walleye Fillets With Beer Batter

Serves 6

3 lbs. Walleye fillets
4 eggs
1/2 can cold beer
2 tsp. salt
1/2 cup flour
1/2 cup crushed corn fakes

Beat eggs until fluffy. Add beer and 1 tsp. salt. In a separate bowl, combine flour, corn flakes and 1 tsp. salt. Dip walleye fillets into liquid batter then into dry mixture, and back into liquid batter a second time. Fry in butter or cooking oil until light brown and fish flakes with a fork.
