Walleye Chowder

Serves 6

1 lb fresh or frozen Walleye cut into small chunks
2 tbsp butter
1 finely-chopped onion
3 potatoes (diced)
1 finely-chopped carrot
2 cups water
2 cups milk
1 cup whole kernel corn
1 tsp salt
1/4 tsp fresh ground pepper

In a deep saucepan, melt butter. Add onion, potatoes and carrots. Cook over medium heat for 5 minutes, stirring occasionally. Add water, cover and simmer until carrots are nearly tender, about 15 minutes.

Stir in milk, walleye and corn. Simmer for 10 to 15 minutes or until fish flakes are opaque. Add salt and pepper to taste.
